You need something simple: Simplenote (free, run by the company behind WordPress, no formatting)

You need something simple, but not too simple: Standard Notes (free for simple, $90/year for formatting and other useful features)

Your notes might turn into a book or screenplay: Scrivener ($51)

You don't mind getting a little technical if it means you have full control over the tool: Emacs Org-mode
